We like to imagine that these words were said by our parents when around the 80s they decided to start what was the first single-wood aging. In fact, it was only with time that it has been realized that during aging in cherry wood barrels, the traditional balsamic vinegar takes on the characteristics of the wood in which it was contained, enhancing different shades of flavor.
