Beyond reality the myth begins. This is the first impression given from the tasting of a Fabulous, obtained in absolutely limited editions out of very ancient casks; their balsamic intensity has the power to suspend the consciousness during a while, opening unknown horizons of ecstasy.
The full body, the complexity of its texture, dominated by such an evident balsamic note, develops multiplying and refracting itself on the palate, offering to senses an iridescent kaleidoscope of colours and intensities, in rapid succession, from a metallic fresh acidity to the warm and syrupy wooden note, each of them able to reactivate childhood memories, linked to ancient discoveries blurred by time.

This sublime fruit of the Ancient Tradition of Modena has been passed on for several generations within the Barbieri family. It is directly derived from the century-old battery which used to belong to great-Grandmother Maria: only very few cruets are available every year.

Aromatic Notes: Food Combinations:
It is characterised by very intense Balsamic tastes and aroma which are valuable, complex and harmonious, certainly difficult to find in other types of Traditional Vinegar. It is always classified in the top positions of the “Palio di San Giovanni”, the annual competition among traditional Balsamic Vinegars in Spilamberto near Modena. It is almost worth collecting. If tasted directly from a teaspoon, it invades the palate with endless sensations that will persist until next year’s supply.

When the Ancient Modenese Tradition reaches heavenly notes; the production is limited to few cruets a year, obtained from more than a hundred years old barrels. Drawings are performed alternatively from each of the barrels stored in the Paradise attic giving sometimes to the product, which personality is always of great impact, the decided and sophisticated scent of juniper, while some others is the soft sweetness of cherry to be prevalent

Year after year its variable perfume and prevalent aromatic note constitute a real surprise because of the balsamic intensity developed by a complex texture composed by scents sweet and spicy. Assured a total fascination of the senses. As it happens with every Fabulous, it deserves a protagonist “solo”, savoured on a ceramic tasting spoon. Eternal persistence, heavenly sensations.

This selection represents the Ancient Tradition of Modena.
Only twelve cruets were filled with the content of one of our most valued vats exclusively on the occasion of the GUSTO BALSAMICO 2007 auction.
The first cruet was sold by Sotheby’s auctioneers for 1.200 €.
The net profit from the sale of all twelve cruets was or will be transferred to charities we have been supporting or those mentioned by You.

Aromatic Notes: Food Combinations:
This is the rarest jewel, a little masterpiece, a real work of art! It ranks among the top positions thanks to a 336/400 score after the organoleptic assessment. It is undoubtedly our most important Vinegar. It has to be tasted directly with a teaspoon to feel the complex and rich heritage of balsamic sensations persisting until the next Auction (pending schedule).
