At Acetaia del Cristo we believe that the real success of Traditional Balsamic Vinegar of Modena lies in the exploitation of the long ageing process and the characteristics that the different traditional woods provide in terms of inimitable perfumes, aromas and flavours.
These are the basic and necessary factors leading to the P.D.O. quality certification witnessed by a numbered seal placed on each cruet.
Words can make the difference too: as often is the case with many excellent products, many attempts emerge in the market to obtain perfect imitations of the Traditional Balsamic Vinegar of Modena PDO. Those substitutes are mere recipes and blends of a range of ingredients and aromas and can easily be spotted thanks to their unlikely labels reporting names and adjectives recalling ancient traditions, even though they are strictly prohibited by all regulations (e.g.: Vinegar Cellars…, Family Reserve…, Ancient Casks…, Seasonings…, Balsamic…). Also the least experienced buyers can easily distinguish Traditional Balsamic Vinegar of Modena PDO from poor quality replicas, even before tasting the product.
Our commitment to maintain top quality standards is apparent and has placed us at the vanguard since the very establishment of the Consortium, in 1979, to protect the RDO (1987) and PDO (2001) designations.
The picture shows the “first cruet by Giugiaro” (seal 00001) next to the previous bottle, which already ensured controlled and guaranteed bottling, a process we have always complied with.
